Ingredients

2 chicken breasts (skinless, boneless)

2½ tablespoons butter (softened)

1 small/medium garlic clove (crushed)

3 tablespoons parsley (finely chopped)

23 tablespoons vegetable or olive oil

1 egg

⅔ cup (70 g) breadcrumbs

3 tablespoons flour

Fine salt and pepper to taste

Instructions

  1. Cut the Chicken: Place a chicken breast on a cutting board and cut it horizontally into two pieces. Repeat with the other chicken breast.
  2. Flatten the Chicken: Place each half between two sheets of parchment paper and gently pound with a rolling pin to about ¼ inch thickness.
  3. Season the Chicken: Season both sides of the chicken fillets with salt and pepper.
  4. Make the Butter Spread: In a small bowl, combine softened butter with parsley and garlic. Season with salt and pepper, mixing thoroughly.
  5. Roll up the Chicken: Spread about 1½ teaspoons of the butter mixture over the center of each chicken fillet. Roll up the chicken from the smaller end, keeping the butter inside.
  6. Coat the Chicken: In separate shallow bowls, place flour, beaten egg, and breadcrumbs. Coat each rolled chicken fillet in flour, dip it in the egg mixture, and coat it in breadcrumbs.
  7. Cook the Chicken: Heat 2 tablespoons of oil in a pan over medium-low heat. Cook the chicken roll-ups for about 5 minutes on each side until golden brown.
  8. Serve: Remove from heat and serve immediately.
