Ingredients

4 cod fillets (6 oz each), about 1 inch thick

4 tablespoons butter

1 cup panko breadcrumbs

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 tablespoons olive oil

Salt and black pepper to taste

Instructions

  1. Prepare the Oven and Dish:
    Preheat the oven to 400°F (200°C). Butter a 9×13 inch baking dish and set it aside.
  2. Season the Cod:
    Pat the cod fillets dry with a paper towel to remove any excess moisture. Season both sides with salt and black pepper.
  3. Make the Breadcrumb Topping:
    In a small saucepan, melt butter over medium heat. Stir in the panko breadcrumbs, chopped parsley, garlic powder, and lemon zest. The mixture should resemble wet sand. Evenly distribute the breadcrumb mixture over the cod fillets, pressing lightly to ensure it sticks.
  4. Bake the Cod:
    Drizzle the cod fillets with fresh lemon juice and olive oil. Bake for 12-15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
  5. Serve:
    Let the cod rest for 2 minutes before serving.
