Ingredients

For the Spinach Mixture:

  • 8 ounces frozen chopped spinach, defrosted
  • 4 ounces cream cheese, softened
  • 3 Tablespoons grated parmesan cheese
  • 1/2 teaspoon garlic powder or 1 garlic clove, grated/finely minced
  • 1/4 teaspoon onion powder
  • 1 teaspoon dried dill, divided (optional)
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 1 lemon

For the Salmon:

  • 24 ounces salmon, cut into 4 fillets
  • 2 teaspoons extra virgin olive oil

Instructions

  1. Preheat the oven: Heat the oven to 400℉. Line a baking sheet with parchment or aluminum foil.
  2. Prepare the Spinach Mixture: Squeeze out excess moisture from the defrosted spinach. In a bowl, combine spinach, cream cheese, parmesan, garlic, onion powder, 1/2 teaspoon dill, 1/2 teaspoon salt, 1/4 teaspoon pepper, and lemon zest.
  3. Prepare the Salmon: Cut a pocket into each salmon fillet. Stuff each fillet with the spinach mixture.
  4. Bake the Salmon: Drizzle with olive oil, season with remaining dill, salt, and pepper. Bake for about 12 minutes until cooked through.
  5. Serve: Garnish with lemon wedges and enjoy!

  • You can prepare the spinach mixture in advance.
  • If using fresh spinach, sauté baby spinach until wilted, chop, and use in the recipe.
