Ingredients

1 cup applesauce

⅓ cup almond butter

1 flax egg (1 tbsp ground flaxseed + 2.5 tbsp water)

2 tablespoons almond milk

1 teaspoon vanilla extract

¼ cup maple syrup

1 cup rolled oats

1¼ cup oat flour

1 teaspoon cinnamon

1 teaspoon baking powder

1 cup chopped apples

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.

  2. Prepare Flax Egg: Mix 1 tablespoon ground flaxseed with 2.5 tablespoons water. Let sit 5 minutes to gel.

  3. Mix Dry Ingredients: In a medium bowl, combine oat flour, rolled oats, cinnamon, and baking powder.

  4. Mix Wet Ingredients: In a separate bowl, whisk applesauce, almond butter, almond milk, maple syrup, vanilla extract, and the prepared flax egg.

  5. Combine: Stir dry ingredients into the wet until just combined. Fold in ⅔ cup chopped apples.

  6. Assemble: Pour batter into prepared pan and top with remaining ⅓ cup chopped apples.

  7. Bake: Bake 25 minutes until lightly golden. Cool 10 minutes in the pan, then transfer to a wire rack to cool completely. Slice into 9 bars.
