Ingredients

Lamb Chops:

  • 8 lamb chops, ideally rib chops

Marinade:

  • 2 tbsp virgin olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juice and zest
  • 2 tsp Italian seasoning
  • 1 tsp sea salt
  • 1 tsp ground cumin
  • 1 tsp sweet paprika or pul biber
  • ½ tsp black pepper, freshly ground

To serve:

  • sprinkle of fresh thyme, mint, or chopped rosemary to garnish
  • lemon wedges

Instructions

  1. Make the marinade: Combine the marinade ingredients in a small bowl. Brush over the lamb chops on both sides. You can cook them immediately or marinate for up to 30 minutes.
  2. Preheat air fryer: Set the air fryer to 400°F / 200°C. Place lamb chops in a single layer in the air fryer basket, cook in batches if needed.
  3. Cook: Air fry for 8-10 minutes, flipping halfway and basting with marinade. Adjust cooking time as needed.
  4. Rest and serve: Remove from air fryer, rest for 3-4 minutes, sprinkle with herbs, and serve with lemon wedges.

Notes

  • Use a meat thermometer for best results, aiming for medium-rare or medium doneness.
