Ingredients

For the Crust:

  • 200g digestive biscuits
  • 100g unsalted butter, melted

For the Filling:

  • 600g cream cheese, softened
  • 150g caster sugar
  • 200ml Baileys Irish Cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 200ml double cream

Instructions

  1. Preheat the Oven: Preheat your oven to 160°C (140°C fan).
  2. Prepare the Crust: Crush the biscuits and mix with melted butter. Press into a 23cm springform tin.
  3. Make the Filling: Beat cream cheese and sugar until smooth. Add Baileys, eggs, and vanilla, mixing well. Whip the double cream until thick and fold into the mixture.
  4. Bake: Pour the mixture over the biscuit base and bake for 45-50 minutes until set.
  5. Cool: Turn off the oven, leave the cheesecake inside for an hour, then cool completely.
  6. Chill: Chill the cheesecake for at least 4 hours before serving.
